Just when I was starting to think I might need to get rid of coffee in my life (the horror), I instead started looking at what was wrong with it and if I could change it. So, what’s wrong with it? First of all, I was drinking WAAAAYYYY too much. It was pretty much my only beverage throughout the day. Crazy, right?! But it was also doing more than I knew. By drinking it all day, the unfelt (at least immediately) effects were a depletion in needed nutrients and blocking iron absorption, and my anemia was seriously critical at this point. So, I needed it to not steal my nutrition! Hmmm… It’s About TimeI started looking into timing of consumption, the vitamins/minerals that complemented each other and those that were antagonists to each other, and there was the answer! Coffee, because of the tannins, blocks iron. Calcium also blocks iron. However, it doesn’t effect fat soluble vitamins (A, D, E, K). So, coffee paired with dairy was fine for absorption of Ca and the crucial fat soluble vitamins. And waiting 2 hrs before consuming things with other nutrients would be a big enough buffer that it wouldn’t hinder utilization of those nutrients. Making Coffee Great AgainI wanted to really maximize my gain from coffee, not just get away with being able to drink it. I remembered “Bulletproof coffee” from my early Paleo diet years (great diet, BTW), and started tweaking! I started with your average blend of grass-fed beef gelatin and grass-fed (Kerrygold) butter. Then I decided it would be a perfect time to also take my Green Pastures Fermented Cod Liver Oil supplement (capsules), because they’re loaded with fat soluble goodness as well. Then I progressed to yummy add-ins to customize the flavor and add nutritional value. With these changes to my morning, I found that I no longer even wanted more than a max of 2 actual cups of coffee. It was very satisfying and unexpectedly energizing (I hadn’t got a legit buzz from coffee in probably 8 years). This was energy that lasted, too! Check out one recipe I came up with that really gets my morning buzzing: Buttered Bee Coffee Recipe2c coffee (my favorite is Counter Culture!) 1 TBS Grassfed Beef Gelatin 2 TBS Grassfed Butter (Best is homemade, but Kerrygold is good too) 1/4 tsp Bee Pollen Granules (great source of B-Vitamins) 1/2 tsp Raw Honey (local from unsprayed areas is best if you can find it) A sprinkle of Cinnamon You can either blend this in a blender or simply stir. The blender gives you more of a fancy, frothy coffee shop latte, but it messes up more dishes. Choose your poison. 🤪 I add the gelatin powder to my cup (or blender) first and mix in a little cool water and stir it up. This is so it will dissolve nicely and not get clumpy. Then I add the butter, pollen and cinnamon and either stir well or blend. Enjoy!
